Our research led us to the top professors at Vanderbilt University’s Institute of Coffee Studies.
Arguably the world’s leading coffee research facility, the Institute was founded in 1999 to examine the physical effects of coffee consumption and to learn more about “the human dimensions of coffee”, such as coffee production in third world countries and its impact on the communities that farm and process it.
In other words, if you were going to talk to anyone to learn more about coffee, these were the people you wanted to talk to! Luckily for Amber and I, two of these distinguished professors were kind enough to let us take them out to dinner and pick their brains on the subject of coffee and health.
We became fast friends and spent quite a bit of time together that summer. The professors introduced us to some of the top coffee scientists in the world and some of the leading doctors on the subject of coffee and health. Before we knew it – we found ourselves surrounded by a world-class group of coffee experts! And over the months that followed, they gave us an education on coffee and health that few people have ever had access to before…
And what an education it was! Here are a few of the highlights of what we discovered:
What science knows about coffee, but most consumers DON’T
Coffee is the world’s most consumed beverage, after water – and one of the most “well-researched” food products on earth. In fact, over 19,000 scientific studies have been conducted on coffee and health.
Coffee got its bad reputation as “an unhealthy vice” during the 1950s, with several research studies linking it to dozens of diseases and disorders, including pancreatic cancer, lung cancer, breast lumps, birth defects and heart disease.
However, since then, modern science has discovered major flaws in those early studies… According to the New England Journal of Medicine, the Mayo Clinic and others, the 1950s studies failed to differentiate between the effects of coffee consumption and heavy smoking, excessive alcohol consumption and lack of physical activity. When the New England Journal of Medicine controlled the original data for these negative behaviors, the findings on coffee and health literally reversed.
This caused the USDA to award coffee a “strong” health grade in early 2015, stating; “Strong and consistent evidence shows that consumption of coffee within the moderate range is not associated with increased risk of major chronic diseases, such as cardiovascular disease and cancer and premature death in healthy adults.”
But, the damage to coffee’s reputation had already been done. From the 1950s forward, the general public would associate coffee with vice, believing that science had declared it unhealthy.

STEP 2: Our Scientific Roasting Protocol
A highly complex series of chemical reactions occur during the roasting process, which few coffee companies understand (but our scientists do!)
As coffee is roasted, healthy CGAs (coffee’s main source of antioxidants) diminish significantly. If the coffee is over-roasted, carcinogens begin to develop. This is why most dark roasted coffees, such as French roast, have lower CGA levels and higher levels of PAHs (a known carcinogen).
But, you can’t just solve the problem by under-roasting coffee either! If coffee is under-roasted, a carcinogen called acrylamide will likely be present, and our tests have demonstrated this to be the case.
From a health perspective, the optimal roast is a true balancing act. We call this: “the Purity ratio”.
Through extensive testing and retesting, our scientists and roasters analyze the results of different roasting times and temperatures, so we can discover which roast curve nets the most positive health attributes.
This process is not a one-time thing… It must be done every year for every harvest, because coffee (like wine) changes substantially from vintage to vintage.
